Omega-3 sì oppure no?

Un “sguardo” attento sui rischi da metalli tossici a seguito del consumo di Integratori Alimentari a base di Omega-3

Negli ultimi anni si sta verificando in tutto il mondo un crescente consumo di prodotti ittici (molluschi, crostacei, ma soprattutto di pesci). Mentre in Europa si arriva ad un consumo medio/annuo a persona di circa 23 Kg, in Italia si raggiungono i 25 Kg.

Tale fenomeno si sta verificando grazie a diversi fattori quali soprattutto il più agevole accesso all’acquisto dei prodotti ittici a seguito della riduzione dei costi di questi prodotti (merito dell’incremento dell’acquacoltura e del fiorire dei pesci surgelati), ma anche per motivi etici (aumento dei vegetariani) e per motivi salutistici. Questi ultimi sono stati sicuramente la principale motivazione che recentemente ha spinto le famiglie a consumare più pesce specialmente a seguito della dichiarazione dell’Organizzazione Mondiale della Salute (OMS – ottobre 2015), che a seguito di uno studio statistico su 800 ricerche scientifiche dedicate al legame che può crearsi tra il consumo di proteine animali e l’insorgenza di tumori, ha affermato che le carni rosse lavorate (salsicce, wurstel, salumi, ecc.) sono sicuramente cancerogene e che probabilmente lo sono anche le carni rosse (suini, bovini e ovini). Non a caso lo IARC (International Agency for Research on Cancer – Agenzia Internazionale per la Ricerca sul Cancro) ha classificato nel carni lavorate nel Gruppo 1 (sostanze in grado di provocare tumori) e le carni rosse nel Gruppo 2A (sostanze che probabilmente possono essere causa di tumori).

Anche i costanti consigli dati, attraverso i media (programmi televisivi e radiofonici, carta stampata, siti internet e social), dai vari esperti di nutrizione hanno contribuito alla crescita di tali consumi. Infatti, questi professionisti consigliano spesso il consumo costante e vario di pesci per la loro presenza di proteine ricche di aminoacidi essenziali (alternative a quelle della carne), di pochi zuccheri, di un minor contenuto in colesterolo rispetto alla carne (eccetto nei crostacei e nelle uova di pesce), per la presenza di lecitine, di fosfolipidi, di vitamine liposolubili (A e D) e idrosolubili (soprattutto la vitamina B6 o Piridossina e la B2 o Riboflavina) e per i diversi sali  minerali contenuti (iodio, sodio, fosforo, calcio, ecc.).

Però le sostanze nutritive che rendono più allettante il consumo dei pesci sono sicuramente gli Omega-3. Grazie all’alta presenza di questi particolari acidi grassi, delle lecitine (che riducono l’assorbimento del colesterolo) e alla bassa presenza di colesterolo i pesci vengono considerati come alimento ipocolesterolemizzante e aterosclerotico che quindi può contribuire nella prevenzione di molte patologie cardiocircolatorie.

Insomma molti pesci sono dei veri e propri toccasana.

Cosa sono gli Omega-3 e quali sono i loro effetti sulla salute umana?

Gli Omega-3 sono una categoria di acidi grassi polinsaturi essenziali (come anche gli Omega-6), indispensabili per il corretto funzionamento dell’organismo. Sono noti soprattutto per la loro presenza nelle membrane cellulari e per il mantenimento della loro integrità. Gli acidi grassi Omega-3 sono detti polinsaturi perché la loro catena di atomi di carbonio (C) comprende vari doppi legami (C=C).

I principali acidi grassi del gruppo Omega-3 sono l’acido eicosapentaenoico (definito EPA) e l’acido docosaesaenoico (chiamato anche DHA).

Gli acidi EPA e DHA possono essere sintetizzati in piccolissime quantità dall’organismo umano a partire dall’acido ALA da qui l’espressione “essenziali” (o AGE), poiché, considerata la quasi impossibilità dell’organismo di sintetizzarli, devono obbligatoriamente essere introdotti con la dieta.

Gli acidi grassi polinsaturi Omega-3 esplicano differenti effetti sulla salute umana. Tra questi i più importanti e conosciuti sono i seguenti:

  1. abbassano i livelli plasmatici di trigliceridi. Per questo motivo sono dotati di un’importante azione antitrombotica (infatti, livelli alti di trigliceridi nel sangue – ipertrigliceridemia – riduce il processo di fibrinolisi, rappresentante lo scioglimento dei coaguli intra-vasali) che si accompagna ad un abbassamento del rischio di patologie cardiovascolari (es. l’infarto miocardico) e cerebrali (es. ictus cerebrale);
  2. migliorano la fluidità del sangue;
  3. sono importanti per le cellule cerebrali e nervose (di cui possono arrivare a costituirne anche il 15%). Il DHA svolge un ruolo chiave nei processi di trasmissione degli impulsi nervosi;
  4. intervengono positivamente (specialmente il DHA) in alcuni stati di depressione, nei comportamenti aggressivi dovuti a stress, nei disturbi dell’umore, nell’ansia e nel nervosismo. In alte parole si può affermare che gli omega-3 possono esercitare delle influenze sul comportamento;
  5. risultano molto importanti (soprattutto il DHA) durante la gestazione quando nel cervello del feto si formano i dendriti (infiniti e sottilissimi prolungamenti dei neuroni che permettono la comunicazione tra questi). Maggiore è il numero di ramificazioni di dendriti e maggiore sarà l’efficienza del sistema nervoso centrale (quindi si avrà maggiore capacità di apprendimento, di memorizzazione e di rielaborazione dei dati);
  6. l’EPA interviene nella sintesi degli eicosanoidi (sostanze con azione antinfiammatoria) quindi limita i processi infiammatori;
  7. agiscono positivamente sulla funzionalità delle vitamine liposolubili quali la vitamina A, la D, la K e la E.

Grazie a tutti questi salutari effetti gli Omega-3 sono considerati indispensabili per la nostra salute, una sorta di “elisir di lunga vita” soprattutto per l’apparato cardiocircolatorio. Di conseguenza dovremo consumare meno grassi saturi (molto abbondanti nei cibi dei Paesi industrializzati) e più grassi insaturi Omega-3.

Però a seguito delle mutate abitudini alimentari (soprattutto al ridotto consumo di pesce quale soprattutto il pesce azzurro delle regioni polari come il Salmone, lo Sgombro e le Aringhe), ai tempi accelerati dove fermarsi per cucinare e assaporare del buon pesce sembra quasi un lusso per pochi, ne consegue che una fetta cospicua della popolazione attua una dieta povera di pesce e quindi di EPA e DHA.

Per raggiungere i livelli ottimali di Omega-3 dovremo mangiare pesce grasso selvaggio (cioè pescato) proveniente dai mari freddi almeno due volte a settimana cosa molto difficile da applicare. Se poi si considera che sempre più persone consumano quasi regolarmente pesce, ma per esigenze di linea, di dieta e di digeribilità preferiscono i cosiddetti pesci magri (quindi poveri in grassi e di conseguenza anche di Omega-3), se si considera anche il fatto che ci sono consumatori che, per questioni economiche, acquistano prevalentemente pesci d’allevamento che ovviamente non provenendo da acque molto gelide e soprattutto essendo alimentati con pasture (composte a base di cereali e non con alghe naturali come quelle che crescono nei freddi mari del nord) sono anch’essi poveri in omega-3 e se infine si considera che negli ultimi anni si stanno selezionando specie ittiche d’allevamento che producono carni poco grasse si capisce che non sempre il consumo di pesce può apportare le dovute concentrazioni di EPA e DHA.

Per tutti i sopra citati motivi, sempre più spesso la nostra alimentazione è carente in omega-3 e tale situazione sta diventando un problema.

Di conseguenza sempre più persone, consapevoli dell’importanza degli omega-3 per la propria salute e del fatto che attuano un regime alimentare povero di questi acidi grassi polinsaturi, incuriosite dai pareri comunicati dagli esperti di nutrizione oltre che “ammaliate” dall’incessante pubblicità di integratori alimentari contenenti Omega-3, sono indotte all’acquisto di questi composti (spesso formulazioni di Omega-3 associate a Omega-6 e/o con vitamine e sali minerali) determinando una crescita esponenziale del consumo di questi acidi grassi polinsaturi (sotto forma di capsule/perle di olio di pesce).

Dove si trovano gli Omega-3?

Le principali fonti naturali di Omega-3 sono il Pesce dei mari freddi conosciuto come “pesce azzurro” (fonte di EPA e DHA), i Crostacei (fonte di EPA e DHA), le Noci e gli Oli vegetali come l’olio di lino (fonte di ALA).

Anche il pesce in scatola (sardine, sgombro, tonno e salmone) e quello surgelato sono una buona fonte di omega-3 soprattutto se il pesce è selvaggio e proveniente da mari freddi.

Fonti alternative a quelle naturali sono gli integratori alimentari, questi sono costituiti da olio di pesce con Omega-3 EPA e DHA concentrati (spesso in rapporto 2:1) i quali vengono estratti attraverso complessi ed efficaci processi come la distillazione molecolare, l’FSE (Estrazione con Fluidi Supercritici), ecc. che limitano l’ossidazione degli omega-3.

Gli integratori alimentari a base di olio di pesce con omega-3 concentrati sono sempre addizionati di vitamina E (tocoferolo) poiché quest’olio è particolarmente deteriorabile. La vitamina E serve a proteggere gli acidi grassi polinsaturi dall’ossidazione di conseguenza ne preserva l’efficacia.

L’olio di pesce, quale integratore di omega-3, non va confuso con l’olio di fegato di merluzzo, olio molto ricco di vitamine A e D (che se assunto senza un controllo medico può portare ad un iperdosaggio di queste vitamine con tutte le conseguenze che ne possono derivare), ma non tanto di Omega-3.

Gli Integratori Alimentari

Gli integratori alimentari sono “prodotti alimentari destinati ad integrare la comune dieta e che costituiscono una fonte concentrata di sostanze nutritive, quali le vitamine e i minerali, o di altre sostanze aventi un effetto nutritivo o fisiologico, sia come monocomposti che come pluricomposti, in forme predosate”.

Gli integratori alimentari sono normalmente presentati in piccole unità di consumo come capsule, compresse, bustine, ecc.

L’immissione in commercio degli integratori alimentari è dipendente alla procedura di notifica dell’etichetta al Ministero della Salute. Una volta valicata tale procedura, i prodotti sono inclusi in uno specifico elenco con un caratteristico codice, i cui estremi possono essere riportati nella stessa etichetta.

Da quanto scritto emerge che gli integratori alimentari devono essere costituiti da sostanze che hanno effetti nutrizionali o fisiologici riconosciuti, ma anche che il loro consumo deve essere giustificato da un riconoscimento di carenza, nel proprio regime alimentare, delle sostanze in questione.

Gli integratori alimentari devono rispettare la specifica normativa UE (Direttiva 2002/46/CE, Direttiva 2006/37/CE, Regolamento CE 1170/2009 e Regolamento 1161/2011), il Regolamento (CE) 1924/2006 sull’informazione volontaria dei consumatori in materia di alimenti che permette alle aziende produttrici di riportare in etichetta indicazioni (nutrizionali e/o salutistiche) autorizzate dalla normativa vigente, il Regolamento (UE) 1169/2011 sull’informazione obbligatoria dei consumatori in materia di alimenti (denominazione, elenco degli ingredienti, delle sostanze che provocano allergie o intolleranze, il termine minimo di conservazione “da consumarsi preferibilmente entro…” o la data di scadenza per i prodotti molto deperibili “data di scadenza…”, il codice di Lotto per l’applicazione del sistema di tracciabilità, condizioni di conservazione e/o di impiego, ecc.). Negli integratori alimentari la “dichiarazione nutrizionale”, prevista dal Reg. 1169/2011, non è obbligatoria in quanto irrilevante per questo tipo di prodotti alimentari.

Oltre a queste norme nella produzione, nel confezionamento e nella commercializzazione degli integratori alimentari si deve adempiere a tutto il quadro comunitario e nazionale inerente la sicurezza alimentare (Regolamenti CE 852/2004, 853/2004, 882/2004, ecc.).

A seguito dell’aumentato interesse dei consumatori verso il proprio benessere fisico, all’aumento dell’età di vita e dell’informazione e dell’accesso a questa la popolazione dei Paesi occidentali sta maturando ed applicando un crescente interesse verso gli stili di vita salutari. Questo essere consapevolmente attenti alla salute ha incrementato i consumi di pesce, di vegetali e di frutta, ma anche di integratori alimentari. Il fatto che la maggior parte di questi prodotti possano essere reperiti presso le farmacie, le parafarmacie, le erboristerie, la GDO (Grande Distribuzione Organizzata) e via internet ne ha agevolato le vendite tanto da portare l’Italia, in questi ultimi anni, ad essere il Paese europeo con il tasso più alto di consumo.

Per quanto concerne gli omega-3 si assiste sempre di più spesso ad una ambivalenza di informazione che confonde i consumatori infatti, da una parte c’è chi dice che bisogna consumare frequentemente del pesce per gli effetti positivi dovuti agli omega-3 contenuti e chi, a seguito dei fatti di cronaca e a differenti ricerche, ci dice che il pesce è sempre più pericoloso per la salute in quanto ricco di metalli pesanti tossici. Appare chiaro che questa dicotomia informativa spaventa molti consumatori e li conduce verso il consumo di integratori alimentari a base di omega-3.

Potenziali rischi da assunzione di Olio di pesce e quindi di Omega-3

Come i costanti fatti di cronaca ci ricordano e le varie Allerte del sistema RASFF (sistema rapido di allerta comunitario, sotto forma di rete, a cui partecipano la Commissione Europea, l’EFSA e gli Stati membri dell’Unione atto a notificare in tempo reale i rischi diretti o indiretti per la salute pubblica connessi al consumo di alimenti o mangimi) il pesce, soprattutto quello selvaggio, può essere contaminato da metalli tossici quali il mercurio (Hg), il piombo (Pb) e il cadmio (Cd) come indicato dalla sottostante tabella. La presenza di queste sostanze nocive nei pesci è dovuta all’incessante inquinamento degli ecosistemi acquatici il quale genera soprattutto fenomeni di bioconcentrazione (concentrazione di sostanze tossiche nel corpo di un organismo vivente) e di biomagnificazione (accumulo attraverso la catena trofica).

Gli effetti sulla salute umana dei metalli tossici sono in funzione dell’esposizione che può essere acuta (cioè dovuta all’assunzione di elevate quantità in tempi ridotti) o cronica (assunzione protratta nel tempo di basse concentrazioni). Nel primo caso si hanno effetti acuti o subacuti (spesso letali) che si manifestano immediatamente o durante l’esposizione. Invece nel caso di esposizioni croniche si hanno effetti che si possono manifestare anche dopo anni dall’assunzione (intossicazioni croniche, tumori, ecc.).

La principale causa dell’inquinamento marino da metalli tossici è rappresentato soprattutto da cause antropiche quali l’utilizzo, nei processi industriali, di sostanze chimiche contenenti metalli, lo smaltimento illegale di rifiuti pericolosi, le attività estrattive, lo sversamento accidentale di sostanze chimiche, le precipitazioni (piogge) contaminate, ecc.

Di seguito sono riportate sinteticamente le principali caratteristiche dei tre metalli tossici più frequentemente presenti nei prodotti ittici.

Mercurio (Hg)

Questo metallo in passato veniva utilizzato a scopo terapeutico (cura della sifilide, anti elmintico e purgante sotto forma di calomelano o cloruro di mercurio, disinfettante sotto forma di ossicianuro de Hg), come antiparassitario e fungicida (nei composti mercurio-organici), nella produzione di vernici e pitture per trattare il legno e la carta, ecc. Oggi è utilizzato molto per la produzione di leghe (chiamate amalgami), di batterie alcaline, di barometri, di polveri detonanti (fulminato di mercurio), di materie plastiche, di preservanti, ecc.

Il versamento del Mercurio (Hg) nelle acque, principalmente come sotto prodotto delle lavorazioni industriali, per decenni è stato considerato non pericoloso in quanto questo metallo in forma inorganica (cioè catione monovalente: Hg+) in acqua risulta insolubile e scarsamente tossico però tale condizione dura poco perché questi cationi vengono ossidati dall’ossigeno presente nell’acqua trasformandosi in cationi bivalenti (Hg++) i quali sono fortemente tossici. Però il vero problema consiste nel fatto che sia il Hg bivalente che quello monovalente in acqua vengono trasformati ad opera di alcuni microrganismi (es. E. coli, Aerobacter aerogens, Aspergillus niger, Pseudomonas fluorescens), ma anche attraverso reazioni chimiche abiotiche che si innescano tra il mercurio e alcune sostanze organiche di origine naturale (es. gli acidi fulvici), in composti metallorganici molto tossici (come il metilmercurio: HgCH3 e l’etilmercurio: HgCH2CH3) i quali grazie alla loro catena alifatica (–CH3 e -CH2CH3) diventano solubili nelle strutture lipidiche e quindi riescono a superare la membrana citoplasmatica cellulare e a legarsi alle proteine interne delle cellule. Di conseguenza si accumulano negli organismi acquatici in maniera crescente lungo la catena alimentare con punte estreme nei pesci adulti di specie carnivore (come i tonni e i pesci spada) che stanno all’apice della catena trofica. Nell’ittiofauna il Hg si può accumulare sino a migliaia di volte rispetto all’acqua contaminata.

Quindi il Mercurio, a seguito del variare della sua speciazione chimica (neologismo della chimica, “rubato” alla biologia, usato per indicare le differenti forme, cioè specie, in cui un metallo può essere presente nell’ambiente), può avere una differente tossicità (come ampiamente dimostrato in Giappone a seguito del caso eclatante e funesto del “morbo della Baia di Minamata” verificatosi parecchi anni fa).

Il rischio di effetti tossici causati dal mercurio (mercurialismo o intossicazione cronica da Hg) è più frequente nelle persone che consumano organismi acquatici contaminati. Il Hg si accumula soprattutto nel SNC (Sistema Nervoso Centrale), nei reni, nel fegato, nei capelli e nel tessuto adiposo.

Piombo (Pb)

Metallo utilizzato soprattutto per la fabbricazione di plastiche, di vernici, di smalti, di batterie, di accumulatori per autovetture, di piastre per la salvaguardia contro le radiazioni nucleari, di ceramiche, di pitture, di munizioni e leghe.

Il piombo perviene nell’acqua principalmente come ripercussione dell’inquinamento atmosferico.

L’assunzione costante di Pb (che avviene soprattutto attraverso alimenti nei quali si è verificato bioaccumulo) può portare a patologie croniche (saturnismo, anemie, nefropatie, ecc.).

Cadmio (Cd)

E’ un metallo bianco con riflessi argentei molto resistente alla corrosione. Spesso utilizzato nell’industria elettrogalvanica (per rivestire altri metalli – cadmiatura – per proteggerli dalla corrosione), nella produzione di vernici, di inchiostri, di materie plastiche (dove conferisce inalterabilità al riscaldamento), di batterie al nichel-cadmio, di cuscinetti a sfera e di leghe (per conferire maggiore resistenza all’ossidazione).

Generalmente il cadmio arriva nel corpo umano attraverso l’aria respirata, il fumo di sigaretta e attraverso gli alimenti contaminati. Questo metallo si accumula nel fegato e nei reni (causando nefropatie, decalcificazione ossea: osteoporosi e osteomalacia), inibisce molti sistemi enzimatici e può esercitare alterazioni a carico della placenta e delle gonadi maschili (testicoli).

Normativa di riferimento

A seguito della crescente contaminazione di metalli tossici nei prodotti alimentari l’UE ha imposto dei limiti ben definiti. Il Regolamento (CE) 1881/2006, che definisce i valori massimi di alcuni contaminanti nei prodotti alimentari (modificato, per quanto concerne il cadmio, dal Reg. (UE) n. 488/2014 ), in merito ai metalli tossici potenzialmente presenti nei pesci prevede dei limiti variabili (espressi in mg per kg di prodotto) a seconda della specie ittica in esame e solo per il piombo indica il limite massimo di 0,1 mg/kg per gli oli e grassi.

I limiti imposti sono i seguenti:

Al fine di garantire un’efficiente tutela della salute pubblica, secondo il Reg. 1881/2006, i prodotti il cui contenuto di contaminanti superi il tenore massimo non devono essere commercializzati come tali né dopo miscelazione con altri prodotti alimentari (quindi viene proibita la diluizione), né essere impiegati come ingredienti di altri alimenti.

Per quanto concerne il piombo l’SCF ha adottato (in data 19.06.1992) un parere con cui è stata approvata una dose settimanale tollerabile provvisoria (PTWI – Provisional Tolerable Weekly Intake) pari a 25 µg/kg di peso corporeo, così come proposto dall’OMS nel 1986.

Per quanto concerne il cadmio, nel parere del 02.06.1995 l’SCF ha approvato una PTWI di 7 µg/kg di peso corporeo e ha raccomandato di intensificare gli sforzi per ridurre l’esposizione alimentare al cadmio dal momento che i prodotti alimentari sono la principale fonte di assunzione di cadmio nell’uomo.

Per quanto concerne il mercurio l’EFSA ha adottato (24.02.2004) un parere sul mercurio e sul metilmercurio negli alimenti approvato la dose settimanale tollerabile provvisoria di 1,6 µg/kg di peso corporeo. A livello internazionale si è fissato che il metilmercurio è la forma chimica che desta le maggiori preoccupazioni e che può costituire oltre il 90% del mercurio totale nei pesci e nei frutti di mare.

Il sistema IFOS

In seguito della carente assunzione di omega-3 attraverso l’alimentazione appare evidente che può risultare utile l’assunzione di integratori di olio di pesce concentrato (cioè con alti dosaggi di EPA e di DHA, in genere superiore al 60%, e con un ottimale rapporto tra questi pari a 2:1), stabile nel tempo e soprattutto ottenuto tramite processi di purificazione avanzata (es. distillazione molecolare multipla) che garantiscano l’assenza di metalli tossici e di diossine. Vista la materia prima da cui vengono estratti gli omega-3 (pesci ricchi di grassi e quindi potenzialmente con alte concentrazioni di metalli) contenuti negli integratori alimentari  base di olio di pesce, per poter fare una scelta oculata cioè scevra di insidie bisognerebbe, prima dell’acquisto, leggere sempre l’etichetta per vedere se il prodotto è certificato IFOS (International Fish Oil Standard). L’IFOS (www.ifosprogram.com) è un ente indipendente (con sede presso l’University of Guelph (Canada), riconosciuto a livello internazionale, il quale analizza la qualità dei prodotti e attesta, quindi garantisce, l’elevato standard qualitativo degli integratori alimentari contenenti Omega-3 attraverso l’adozione di criteri definiti dalla WHO (Organizzazione Mondiale della Sanità) e dal Council for Responsible Nutrition (CNR). Questa certificazione IFOS garantisce l’adesione ad uno standard volontario molto severo accessibile solo a poche aziende e quindi riscontrabile solo sui migliori prodotti commercializzati.

L’integratore alimentare certificato IFOS è sicuramente ultrapurificato (in pratica quasi puro a seguito della distillazione molecolare multipla) di conseguenza esente da rischi igienico-sanitari soprattutto se con un punteggio pari a 5. Infatti, a seguito dei risultati dei test analitici, l’IFOS assegna un punteggio ad ogni lotto di produzione degli integratori alimentari contenenti Omega-3. Questo punteggio va da 0 a 5 e viene pubblicato sul sito IFOS in modo tale che tutti possano verificare il valore ottenuto in ogni lotto di ogni azienda che produce integratori di Omega-3. Se qualche azienda non appare in questi elenchi vuol significare che ha deciso di non sottoporre il proprio integratore ai severi controlli IFOS presumibilmente in quanto conscia dei risultati ottenibili. Alcune aziende invece fanno analizzare solo alcuni lotti di produzione dei propri integratori contenenti Omega-3 quindi in questo caso non basta leggere sull’etichetta del prodotto che l’azienda certifica i propri integratori attraverso l’IFOS, ma per non correre rischi bisognerebbe verificare sul sito IFOS se quel particolare lotto in vendita sia stato realmente analizzato, quindi certificato e con quale punteggio.

IFOS assegna le 5 stelle in base ai seguenti criteri di stima:

  • Una stella per il superamento di tutte le categorie testate secondo i parametri CRN/WHO, che corrispondono a livelli di: pcb, diossina, furani, perossidi, anisidina, ossidazione totale, acidità, mercurio, piombo, arsenico e cadmio inferiori rispetto a specifici valori definiti in sede CRN*/GEOD e WHO* evidenziati sul certificato IFOS;

Al termine delle determinazioni analitiche, al lotto di Omega-3 viene assegnato un certo numero di Stelle, che è espressione dei seguente giudizi:

  • 1 stella: livello qualitativo “scadente
  • 2 stelle: livello qualitativo “sufficiente
  • 3 stelle: livello “buono
  • 4 stelle:molto buono
  • 5 stelle: livello qualitativo “eccezionale”.

Insomma l’acquisto di integratori di Omega-3 non è semplice e se si vogliono avere garanzie igienico-sanitarie l’arma vincente risulta essere, come sempre, l’informazione!

Indagine sugli Integratori Alimentari di Omega-3

Da quanto premesso appare evidente che gli omega-3 svolgono un ruolo molto importante sulla salute umana, che a seguito di alcuni fattori svariate persone assumono quantità basse di queste sostanze e che per sopperire a tali carenze consumano specifici integratori alimentari che, vista la materia prima da cui vengono ricavati, potrebbero contenere PCB (policlorobifenili), diossine e soprattutto metalli tossici.

Posti questi assunti viene spontaneo domandarsi, ma “gli integratori alimentari di omega-3 sono sicuri?”, “contengono metalli tossici?”.

Con l’obiettivo di dare una chiara risposta a questi quesiti ISQAlimenti.it ha indagato in merito ai potenziali problemi da contaminazione di metalli pesanti tossici nell’olio di pesce contenuto negli integratori alimentari a base di omega-3.

Per l’indagine sono stati selezionati nove tra gli integratori alimentari di omega-3 a base di olio di pesce più facilmente reperibili nei diversi punti vendita (farmacie, parafarmacie, erboristerie e GDO) variando tra prezzi accessibili alla maggior parte dei consumatori e prodotti dai costi più elevati.

In tutti e nove gli integratori posti sotto indagine si sono ricercati i seguenti metalli tossici: mercurio, piombo e cadmio. Il mercurio è stato ricercato nella sua forma totale cioè dato dalla somma dell’Hg inorganico (Hg+ e Hg++) più l’Hg organico (es. metilmercurio).

Tutti i prodotti esaminati sono a base di olio di pesce eccetto uno (il MegaRed Olio di Krill – Omega 3) che è a base di puro olio di Krill (piccolo crostaceo pescato nelle gelide acque dell’oceano Antartico) e tutti si presentano sotto forma di capsule/perle (che costituisce l’involucro esterno).

Tra i vari integratori cambiano le concentrazioni di omega-3, il numero di capsule contenute nelle rispettive confezioni e le modalità d’uso. Solo un prodotto è certificato IFOS (EnerZona – Omega3 RX).

Tutti gli integratori alimentari portati in laboratorio erano caratterizzati da un imballaggio intatto (cioè tutte le confezioni erano integre) e dall’essere ampiamente all’interno della propria shelf-life (cioè “la vita del prodotto sullo scaffale: periodo di tempo durante il quale il prodotto mantiene le sue caratteristiche qualitative nelle normali condizioni di conservazione e utilizzo) cioè del TMC (Termine Minimo di Consumazione) riscontrabile dalla frase “da consumarsi preferibilmente entro il/la fine…”.

Si è rilevato che solo alcuni integratori riportavano nella confezione alcuni ingredienti in carattere grassetto (es. l’ingrediente “pesce”) per evidenziare, secondo quanto imposto dal Reg. (UE) 1169/2011, che alcuni componenti (es. il pesce, i crostacei)  sono degli allergeni e che di conseguenza chi dovesse avere problemi di questo tipo dovrebbe usare con cautela questi prodotti.

Integratori alimentari ricchi in Omega-3 indagati per quanto concerne la presenza di metalli pesanti tossici:

Le determinazioni analitiche sono state effettuate nel Laboratorio chimico Merceologico  della Camera di Commercio Riviere di Liguria (LABCAM srl di Albenga – SV) facente parte della rete camerale nazionale. Il laboratorio è provvisto di diversi riconoscimenti: accreditato ACCREDIA, CertiQuality (norme UNI), Ministero della Salute, Ministero delle Politiche Agricole, Alimentari e Forestali (MIPAF), Regione Liguria, EDEKA, ecc.

Conclusioni

A seguito dell’indagine effettuata è emerso che tutti e nove gli integratori alimentari esaminati risultano essere ampiamente al di sotto dei Tenori Massimi (espressi in mg/kg di peso) dei tre metalli tossici ricercati.

Infatti, per il mercurio (tenore massimo previsto negli Integratori Alimentari pari a 0,10 mg/kg) si è rivelato un valore oscillante tra < 0,001 mg/kg e 0,002 mg/kg. Per il piombo (tenore massimo previsto negli Integratori Alimentari pari a 3,0 mg/kg) si è rilevato il valore costante di < 0,001 mg/kg e per il cadmio (tenore massimo previsto negli Integratori Alimentari pari a 1,0 mg/kg) si è evidenziato < 0,01 mg/kg.

Quindi, in base ai dati ottenuti, emerge che il rischio di presenza di metalli pesanti tossici negli integratori alimentari di omega-3 a base di olio di pesce e/o di olio di Krill è praticamente inesistente nonostante le differenti formulazioni (intese come concentrazioni di omega-3), la presenza o assenza di certificazione IFOS, i diversi prezzi e le differenti tipologie dei punti vendita (farmacie, parafarmacie, erboristerie e GDO). Insomma si può affermare che il consumo di questi integratori alimentari è sicuro in quanto scevro da contaminazione chimica da parte dei principali metalli pesanti tossici sicuramente dovuta ai metodi di estrazione applicati che riescono a rimuovere gli eventuali metalli presenti nell’olio di pesce e molto probabilmente anche i PCB e le diossine.

Ciò non vuol dire che bisogna consumare integratori alimentari di omega-3 in sostituzione dei comuni prodotti ittici, in quanto questi ultimi apportano tanti differenti e utili principi nutritivi (proteine ricche di aminoacidi essenziali, lecitine, fosfolipidi, vitamine liposolubili – A e D – e idrosolubili, soprattutto la vitamina B6 e la B2, differenti sali  minerali), ma che se si ha una accertata carenza di omega-3 e per esigenze personali si consuma poco pesce, gli integratori di omega-3 rappresentano indubbiamente un valido mezzo di supplemento senza mai dimenticare che gli integratori alimentari non devono sostituire una dieta varia, equilibrata e uno stile di vita sano.

Per assumere naturalmente Omega-3 sarebbe consigliato consumare regolarmente pesce selvaggio (anche surgelato o in scatola) proveniente da mari freddi, ma per evitare l’assunzione di metalli tossici (sempre più spesso presenti nei pesci) sarebbe opportuno, ove possibile, scegliere pesci di taglia medio-piccola, che non siano all’apice della catena alimentare (quindi limitare il consumo dei grandi predatori come il tonno, il pesce spada, le verdesche, il marlin, ecc. oppure alternare questi pesci con la palamita e/o le acciughe). Qualora si decidesse di consumare del tonno (Thunnus thynnus) sarebbe opportuno preferire quello proveniente dall’Oceano Atlantico in quanto recenti studi condotti da ricercatori delle università di Harvard e Massachussetts hanno dimostrato che nel periodo 2004-2012 si è registrata una diminuzione di circa il 20% di mercurio nelle carni di questi grossi predatori.

Oltre a quanto sopra detto bisogna anche preferire i pesci pescati in acque poco inquinate (quindi bisogna porre attenzione ai codici FAO riportati obbligatoriamente nelle etichette espositive dei pesci in vendita) e stare attenti alle frodi commerciali (es. vendita di pesce dichiarato proveniente dal Mediterraneo o dai mari del nord invece pescato in acque inquinate come quelle del Mekong).

Per quanto concerne l’acquisto di integratori a base di omega-3 sarebbe sempre opportuno seguire i consigli del proprio medico curante e/o del nutrizionista che ci assiste invece la maggior parte dei consumatori preferisce il “fai da te” informandosi su internet o attraverso scambi di informazioni tra amici, colleghi e parenti (spesso persone con scarsa preparazione tecnico-scientifica nel campo della nutrizione e della sicurezza alimentare). Solo raramente i consumatori acquisiscono informazioni attraverso i canali più consoni (medici, dietologi e nutrizionisti) e in alternativa il personale qualificato operante nelle farmacie, parafarmacie ed erboristerie. I consumatori che acquistano via internet spesso rischiano di acquistare prodotti di indubbia qualità e sicurezza, ma sicuramente economicamente molto competitivi.

È opportuno precisare che con l’integrazione di omega-3 non indicata da personale competente non sempre si raggiunge la “Dose Efficace” (cioè il consumo del quantitativo giornaliero raccomandato) rischiando di andare in sottodosaggio oppure in sovra concentrazione. Si tenga anche presente che gli omega-3 andrebbero presi con particolari cautele da tutte le categorie di persone affette da emofilia o che fanno uso di farmaci anti coagulanti.
